SUMMARY OF POSITION


We are searching for a committed, proactive Restaurant Manager who would enjoy work in an exciting, fast-paced environment. The Restaurant Manager will promote and grow the business; hire and train wait staff, and ensure that guests are receiving excellent drinks, food, and service. You will also manage inventory and resources, plan promotional events, ensure that quality and safety controls are followed, maintain current licenses and update vendor contracts, create schedules, and set business objectives to increase profits and maximize customer satisfaction. You should also be able to work with diverse personalities and diffuse tense situations.


In order to succeed as a Restaurant Manager, you should be observant and have the ability to think critically and efficiently. You should be a skilled communicator with excellent problem solving, observation, and interpersonal skills.


SCOPE


Summary of Responsibilities:


  • Must be familiar with procedures and standards of all the outlets.
  • Plan, control and coordinate Restaurants organization and activity and remember and ensure daily activities of all TMs are followed – Theme night set ups etc.
  • Apply and ensure application of standards and procedures set by Raffles Resort and those resulting from the Hotel’s Food and Beverage policy.
  • Participate in managing the department’s personnel in terms of hours, public holidays, discipline and training according to instructions from F&B Service Manager & FBM.
  • Apply and ensure application of procedures and regulations concerning hygiene and safety.
  • Make sure that all material and equipment made available to the Restaurant is correctly used.
  • Make concerted effort to report and control breakage.
  • Participate in inventory taking at scheduled times.
  • Attends and contributes to the daily Food and Beverage meeting.
  • According to F&B Manager’s instructions, implement the appropriate means to improve costs, personnel, expenses and charges.
  • Make any suggestions to F&B Manager which will improve Restaurant profitability.
  • Establish and maintain effective employee relations.
  • Conducts, under the guidance of the F&B Manager such functions as interviewing, hiring, employee orientation, on-the-job performance, coaching, counseling, impartial disciplinary meetings and suspension if necessary to ensure appropriate staffing and products.
  • Performs related duties and special project as assigned.
  • Controls and regulates costs associated with outlet.
  • Before each service, check Restaurant cleanliness and set-up.
  • Make sure that Team Members competency levels are up to the standard requirement and, if need be, take the required actions to correct discrepancies.
  • Participate in service as necessary to ensure agreed standards are met.
  • Ensure good coordination between Restaurants and the kitchen: knowledge of the menu, suggestions, missing dishes, etc.
  • Conduct pre-meal briefing and maintain log book to ensure 100% communication flow to all TMs.
  • Take responsibility for reception and service quality, supervised directly by the Outlet Manager.
  • Pay attention to guests’ comments and suggestions; immediately take all required corrective measures and send remarks to F&B Manager.
  • In cooperation with F&B Manager develop initial and in-service training programs and ensure follow-up, paying particular attention to improving reception and service quality.
  • Make any suggestion to the F&B Manager likely to improve service quality.
  • Send daily outlet logbook to F&B office.


GENERAL DUTIES:


Health and Safety


  • Ensure that all potential and real Hazards are reported immediately and rectified.
  • Be fully conversant with all departmental Fire, Emergency and Bomb procedures.
  • Ensure that all emergency procedures are rehearsed, implemented and enforced to provide for the security and safety of guests and employees.
  • Ensure the safety of the persons and the property of all within the premises by fairly applying Hotel Regulations by strict adherence to existing laws, statutes etc.
  • Ensure all staff within the department work in a manner which is safe and unlikely to give risk of harm or injury to selves or others.
  • Use safe manual handling techniques and practice safe work habits following El Nido Resorts Health, Safety and Environment policies, maintain procedures to minimize our impact on the environment and prevent pollution.


Confidentiality


  • Ensure confidentiality and secure storage of all intellectual property and data bases, both hard copy and electronic. Adhere to El Nido Resorts Internet and Email policy.
  • Ensure Hotel, Customer and Staff information or transactions are kept confidential during or after employment with the company.

Carries out additional tasks from time to time, by request of senior team members which may not be directly related to the job role but necessary for smooth operation of the resort


Qualifications:


  • Restaurant or management experience or more education is generally preferred.
  • Strong understanding of business management and accounting principles.
  • Excellent computer, problem-solving, and customer service skills.
  • Exceptional communication and interpersonal skills.
  • Ability to diffuse tense situations and resolve conflicts.
  • Willingness to work during peak hours, including nights, weekends, and holidays.
  • Effectively delegate responsibilities and maximize resources.
  • Decisiveness.
  • Previous experience in Maldives, island or remote location.
  • Experienced in Fire & Life safety systems.
